The other day I took a stab at making mango chicken (on our gas stove-top).
Peel and dice one nerf-football sized ripe mango
Peel and dice one softball sized ripe tomato
Add cilantro, basil and black pepper
Cook on high heat till caramelized; transfer to bowl
Finely chop part of an onion, 2 cloves of garlic, and part of a sweet red chili pepper; caramelize in soy oil
Add one diced pechuga de pollo (2 chicken breasts) and brown
Add mango and tomato back into the pan
Reduce heat and cover; cook for perhaps another 15 minutes (long enough to do the dishes and sit down a bit)
Serve with fresh bread and green salad (rice would also be good)
